Description

VinInfo is a complete winery control system - it is a computerized system for regulating and controlling the fermentation process as well as other processes in the winery.

The Base Units represent the main control element for the VinInfo system.

The Base Units measure, control and regulate the fermentation temperature and also control and regulate other equipment (heating or cooling unit, air conditioning unit, pumps) or applications in the winery. Temperature, humidity sensors or electrovalves are directly connected to the Base Units.

The VinInfo software application, created specifically for winemaking, is friendly and easy to use and offers the possibility of editing information in graphic or tabular format, saving and archiving information. The main screen can be customized to show you the plan of the winery.

The position of the tanks, the different halls and the units corresponds to their real locations, giving you a convenient reference point of the fermentation tanks and all the other units controlled by the VinInfo software. Each element is represented by a distinct symbol. All important information is available at any time through the software.

By moving the mouse over an object, a "summary" window containing its parameters opens, click on the desired object and additional information is displayed, for example:

  • Temperature
  • Emissions of CO2 (fermentation intensity), equal to the rate of conversion of sugar
  • Manual or automatic control (functioning mode)
  • Condition of the taps (RED=warming, BLUE = cooling, GREEN = neutral)
  • Activity of the pumps
  • Indoor temperatures of the winery areas

  • Outside temperature and ventilation system condition

CO2 Regulation

A fundamental factor in the production of quality wine is the well-controlled fermentation process. Optimal alcoholic fermentation is obtained when fermentation proceeds constantly and continuously, without peaks of intensity (large increases or decreases in temperature).

Classical fermentation control systems operate with temperature as the only regulating parameter. The advanced electronic temperature control system, VinInfo, provides hardware and software to control fermentation by measuring CO2 emissions - fermentation intensity.

This additional parameter allows a natural and energy-saving fermentation based on the actual sugar content of the fermenting must.

For this, the initial sugar concentration in the wort as well as the volume of the fermentation tank must be entered into the software. VinInfo continuously calculates the residual sugar content. The winemaker then determines the desired fermentation speed within the VinInfo software by establishing the fermentation curve over a defined period of time, either by presetting the programmed CO2 emission level or the residual sugar content value after fermentation.

The fermentation time, CO2 emissions, residual sugar as well as the permissible margins from these values can be determined for each tank individually.

High-precision sensors attached directly to the tank or wooden barrels measure CO2 emissions several times per second, information that reflects the intensity of fermentation and transmit this information to the corresponding control unit of the tank – the base unit – and from there to the server. The software adjusts the temperature within the pre-programmed values of the maximum and minimum temperatures allowed to maintain the necessary CO2 emissions. The winemaker can manually intervene in the process at any time.

In an existing VinInfo installation, CO2 sensors can be easily added at any time, as each tank base unit is already ready to measure the CO2 emission.

In the CO2 regulation, VinInfo controls the cooling units according to the desired fermentation level and fermentation temperature, depending on the actual state of the wort. This way of using cooling allows the vitrifier to achieve energy savings compared to the standard temperature control system. Constant and accurate adjustment of the fermentation rate according to the fermentation level results in reduced aroma losses and thus improved wine quality.
